Another amazing recipe that we found and have promptly forgotten. Chickpeas, eggplant, squash, and tomatoes wrapped in phyllo. Mr. ManFriend did a great job with this one. Absolutely delicious!

Sometimes i just crave greens and potatoes doused in olive oil--a habit i picked up from my parents. We got some kale just in time to satisfy my craving!

The man friend made himself a heartier meal with seitan, kale, almonds, and chives.

Tomatoes at the store looked good that day, so we picked some up and chopped up some squash, spring onions, eggplant, peppers, etc. and made a very tasty gazpacho (with olive garnish).

I was a little worried about the cabbage we'd gotten--not a big cabbage eater, so didn't really know what to do with it. Apparently, people stuff it. So we read a few recipes and concocted a vegetarian one. It was good, but should've been saucier.

Found an amazing recipe for a stir fry with baked tofu and all I can remember is that i think there was coconut milk in the sauce. Hope i can find it again!

mad a mess of lentils one night, threw them together with some roasted beets, lettuce, and a mustard, shallot, and sherry vinegar dressing

and THEN, i threw the remaining lentils together with some Dines farm bacon, and whipped that into another his and hers salad.

It had been a while since I actually tried to make a nice breakfast. Thankfully, I had some mustard greens that were starting to wilt and thus, motivation to get off my ass on a Sunday morning and make some frittatas (i have no idea what the plural of frittata is).

His: mustard greens, caramelized spring onions, Dines Farm eggs, and a generous dousing of piri-piri.

Hers: all that minus the piri-piri, plus Dines Farm bacon.

Fiber is good for you!

Hearing that winter savory was made to go with beans (i.e., they are rumored to cancel out some of the less favorable side effects of beans), I made a big batch of beans in my crock pot. The next day we used the white beans in a thick soup with radicchio, whole wheat orecchiette, and oregano (plus chouriço for me, since i was fresh from a visit with the parents).

Act V - Making Dinner For One More Fun

Still, i thought it was worth showing two different ways of making the same thing from the same bounty. This black bean soup was made with curly cress, burdock, green pepper, and (canned) tomatoes, and topped with scallions and garden cilantro.
